Cottage Cheese Toast + Cherry Tomato Dill Salad

Sourdough bread + cherry tomatoes — ground the body, support digestion, and offer mineral-rich, sun-grown nourishment
Nourishment Notes
Don’t knock it ’til you try it. This toast is a little weird, super easy, and playful. Here are some other combos I’ve tried and loved:
• microgreens + avocado
• local honey + crushed red pepper
• grilled asparagus + sea salt
• sautéed spinach + lemon pepper
• peaches + local honey

Time: 5 minutes
Ingredients
• Local Sourdough Bread – 1 slice
• Cottage Cheese – 1/2 cup, whole milk (I prefer Good Culture)
• Cherry Tomatoes – a handful, halved
• Pasture Raised Hard-Boiled Egg – 1, sliced
• Fresh Dill – a pinch, chopped
• Lemon Pepper Seasoning – a dash
• Cold-Pressed Extra Virgin Olive Oil – a drizzle
• Sea Salt + Black Pepper – to taste
Method
Toast a thick slice of local sourdough to your preferred crispness. Spread a generous layer of whole milk cottage cheese over the toast. Slice a hard-boiled egg and place the slices evenly over the cottage cheese. Finish with a sprinkle of lemon pepper seasoning.
Little side salad: On the side, halve a handful of cherry tomatoes and toss them with a drizzle of olive oil, flaky sea salt, and fresh dill.
