Nourishment Notes

The longer name of this dish might be: Mushrooms to Impress Your Friends. Because every time I make them, someone asks for the recipe. They’re earthy and indulgent, but also incredibly easy and endlessly adaptable. I’ve used shiitake, maitake, oyster, and cremini—but you can use whatever mix you have. The secret? Don’t stir too much. Let them brown. That’s where the magic is.

Mushrooms grow in darkness, draw up unseen minerals, and form vast mycelial networks that mirror spiritual connectivity and higher intelligence. Just like the Crown connects us to something greater, mushrooms remind us of the invisible threads that link all living things. They’re both earthly and ethereal—anchoring us in the body while offering quiet access to something more expansive. In this way, they become a bridge between the Root and the Crown—between physical nourishment and spiritual awareness.


Cook Time: 1 hour

Serves: 5 friends (as a side)


Ingredients 

Local Mushroom Medley – 1 lb, sliced medium-thin (shiitake, cremini, oyster, maitake, or any mix)

Shallots – 2–3 medium, sliced into thin rounds

Fresh Garlic – 3 cloves, sliced, grated, or minced

Fresh Parsley – 2 heaping tbsp, minced

Organic Dry White Wine – ¼ cup (optional, for deglazing + brightness)

Ghee Cooking Fat – ghee preferred, or avocado oil

Sea Salt – to taste


Method

Heat a large cast iron or heavy-bottomed pan over medium heat and add about 2 tablespoons of ghee (or your fat of choice). Once the pan is hot, add the shallots and a pinch of sea salt. Sauté gently for around 5 minutes, just until translucent and fragrant—they should soften but not brown.

Next, add all your mushrooms with another generous pinch of salt. Toss to coat everything in the fat, then spread the mushrooms out evenly across the pan. Resist the urge to stir—this is key to getting that rich, golden crust. Let them cook undisturbed for about 5 minutes. Once the undersides are seared and golden, stir and allow the mushrooms to reduce by half or more.

When they’re well-browned, add the garlic and stir again, letting it cook for another 5 minutes while tossing occasionally. If using white wine, raise the heat slightly, pour it into the pan, and scrape up the browned bits from the bottom with a wooden spoon. Let the wine cook off, then turn off the heat. Finish with fresh parsley and taste for salt. Serve immediately or store to reheat throughout the week—it’s shockingly good with eggs, steak, pasta, or anything that needs a little savory grounding.
