Nourishment Notes

I never thought I was a “baker.”
But one night, I had a dream—I was making scones. The next morning, I opened Instagram and there it was: a scone recipe, waiting for me like a cosmic wink. I felt it in my body—I had to make them.

So I did. And to my surprise, they were simple. No sugar in the dough. No over-processing. Just real food, and a soft, pillowy center that made my whole kitchen smell like joy.

Now I make these all the time—for my girls, for friends, for hosting. They feel both grounding and light, comforting and bright. They’re everything I didn’t know I needed… and yes, you can freeze them.

This is what happens when food finds you. When the spirit moves through your hands. When nourishment isn’t forced—it’s felt.


Makes: 11 large or 15 medium scones
Cook Time: 20 minutes


Ingredients 

Unbleached All-Purpose Flour – 7 cups (I use Bob’s Red Mill for quality and integrity)
Aluminum-Free Baking Powder – 3 heaping tablespoons
Mineral-Rich Sea Salt – a pinch
Grass-Fed Salted Butter – 16 tbsp (2 sticks), cold
Pasture-Raised Eggs – 4 total
Whole Milk (preferably local or raw) – 2 cups
Organic Cane Sugar – ½ cup (for topping only—none in the dough)


Method

Preheat your oven to 475°F.
Sift the flour, baking powder, and salt into a large wide bowl.
Grate the cold butter using a cheese grater, then rub it into the dry ingredients until crumbly.
In a separate bowl, whisk 3 eggs with 1¾ cups of milk. Pour into the dry mixture and stir until a soft dough forms—it may take a bit of effort.
Turn the dough out onto a floured surface. Don’t knead—just shape into a round.
Roll to about 1-inch thickness. Slice into fringe or square shapes.

Crack the remaining egg and mix with a splash of milk to make an egg wash.
Pour sugar onto a small plate. Brush the tops of each scone with the egg wash, then dip into the sugar.
Place on a parchment-lined baking sheet and bake for 10–12 minutes (15–18 minutes for large scones), or until golden and fully baked inside.

Serve warm with butter or no-added-sugar preserves.

Freezer tip: After forming and sugaring the scones, place extras on a tray to freeze overnight. Once frozen, transfer to an airtight container. Bake straight from the freezer as needed—same temp, same joy.
